EASY VEGAN CHILI

Easy Vegan Chili

One of my favorite things about cooler weather is eating chili! This chili is super flavorful, customizable and a definite comfort food.

INGREDIENTS

  • 46oz can tomato juice

  • 1 can each of 3 different beans, rinsed (I like black beans, red kidney beans and white cannellini beans)

  • 1/2 onion (diced)

  • 2-3 cloves garlic (minced)

  • 1/2 cup dry red lentils (rinsed)

  • 1 tablespoon chili powder

  • 1/2 teaspoon coriander

  • 1 teaspoon cumin

  • 1/2 teaspoon black pepper

METHOD

  1. In a large pot, sautee diced onions and minced garlic in a small amount of water or vegetable broth, until translucent and fragrant.

  2. Add all remaining ingredients to the pot and bring to a boil.

  3. Reduce heat and simmer 30-45 minutes, stirring occasionally.

  4. Add your favorite toppings and enjoy! I like to top mine with vegan cheese and vegan sour cream and eat it with Frito corn chips. (They’re accidentally vegan!) ENJOY!!!
