VEGAN BUTTERMILK PANCAKES

Vegan Buttermilk Pancakes (Dairy-Free)

These pancakes are sure to be your new favorite! They’re light, fluffy and delicious…. the ultimate comforting breakfast!

INGREDIENTS

  • 1 cup unsweetened almond milk

  • 2 teaspoons apple cider vinegar

  • 1 cup all-purpose flour

  • 2 teaspoons coconut sugar or cane sugar

  • 2 teaspoons baking powder

  • 2 teaspoons baking soda

  • 1/2 teaspoon sea salt

METHOD

  1. In a small bowl mix together the almond milk and apple cider vinegar and set aside.

  2. In a separate medium mixing bowl whisk together all the remaining ingredients.

  3. Lightly whisk the wet ingredients into the dry ingredients, just until combined. Do not overmix, lumps are ok.

  4. Heat a non-stick griddle or pan to medium-high heat.

  5. Pour 1/4 cup of batter for each pancake onto the heated griddle. Cook until bubbles form on top and the edges look slightly done. Flip and cook 2 -3 minutes more or until golden.

  6. Serve with pure maple syrup and/or fruit and ENJOY!!!

Makes 6-8 pancakes
