VEGAN BUTTERMILK PANCAKES
Vegan Buttermilk Pancakes (Dairy-Free)
These pancakes are sure to be your new favorite! They’re light, fluffy and delicious…. the ultimate comforting breakfast!
INGREDIENTS
1 cup unsweetened almond milk
2 teaspoons apple cider vinegar
1 cup all-purpose flour
2 teaspoons coconut sugar or cane sugar
2 teaspoons baking powder
2 teaspoons baking soda
1/2 teaspoon sea salt
METHOD
In a small bowl mix together the almond milk and apple cider vinegar and set aside.
In a separate medium mixing bowl whisk together all the remaining ingredients.
Lightly whisk the wet ingredients into the dry ingredients, just until combined. Do not overmix, lumps are ok.
Heat a non-stick griddle or pan to medium-high heat.
Pour 1/4 cup of batter for each pancake onto the heated griddle. Cook until bubbles form on top and the edges look slightly done. Flip and cook 2 -3 minutes more or until golden.
Serve with pure maple syrup and/or fruit and ENJOY!!!
Makes 6-8 pancakes
