VEGAN QUESO CHEEZY SAUCE
Vegan Queso Cheezy Sauce (Dairy-Free)
We put this stuff on everything! It’s so good and so cheezy - with none of the cruelty. Don’t let the list of ingredients fool you, it’s mostly spices and it’s really easy to make.
INGREDIENTS
4 medium potatoes (peeled & diced. Yukon Gold potatoes do not need to be peeled)
2 medium carrots (diced)
1 1/2 to 2 cups hot water (reserved from boiled potatoes and carrots)
3 jalapeno slices (from a jar)
1 tablespoon jalapeno juice
1/2 cup nutritional yeast
1/4 teaspoon smoked paprika
1/2 teaspoon chili powder
1/4 teaspoon cumin
1/2 teaspoon onion powder
1/2 teaspoon garlic powder
1/2 teaspoon turmeric
1/2 teaspoon sea salt
1 tablespoon green chilis (optional)
METHOD
Boil potatoes and carrots until tender. Strain into a bowl, reserving water for later use.
Add boiled potatoes and carrots, 1 1/2 cups of reserved hot water and all remaining ingredients to a high speed blender. Blend until smooth, adding more reserved water if needed. ENJOY!!!
Makes about 4-5 cups
