ROSEMARY THYME SMASHED POTATOES
Rosemary Thyme Smashed Potatoes
These cute little potatoes are easy to make and so delicious! They go with just about any type of meal or make a great snack. Try them with a yummy dipping sauce like my Cilantro Lime Crema or Queso Cheezy Sauce!
INGREDIENTS
12-15 small Yukon Gold potatoes
1/2 teaspoon dried rosemary
1/2 teaspoon dried thyme
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/8 teaspoon sea salt
1/8 teaspoon black pepper
olive oil
METHOD
The potatoes need to be pre-cooked in order to smash them so steam or boil them until fork tender. While you wait, preheat the oven to 375°F and line a baking sheet with parchment paper or silicone mat.
When potatoes are fork tender, place them on the lined baking sheet. Using the bottom of a glass, gently smash the potatoes into a disk shape and lightly spray them with olive oil.
Mix all the spices together in a small bowl and sprinkle on top of potatoes.
Bake for 20-25 minutes or until golden brown around the edges. ENJOY!!!
